Quite excited to showcase this micro-lot from the JC team, coming from outside the city of Cristina in the southern portion of Minas Gerais. A very versatile coffee and roast profile which can shine on any brewing method, espresso shots will be bright but sweet! Flavors of Berries, Milk Chocolate, and Caramel.

The 4 hectare farm has areas reserved for preserving forests on the property, which are home to  large native plants as well as several wild animals. In the area, it is common to see maned wolves, armadillos, monkeys, jacu birds, saffron finches and hawks, among others. The coffee cherries are picked over cloths to avoid contact with the ground. On the same day, the beans are bagged and transported to the processing center located on the farm itself. The coffee is dried on a concrete patio, with greenhouses to avoid the possible risk of unwanted fermentation. This approach that Sebastiao and his family takes elevates the coffees produced to impressive levels.
